Unit cost calculator

Unit cost is what one unit of something you buy costs you: (Total paid + Extras like delivery) ÷ Quantity. Pay ₺6,500 for 5 kg of pistachios and a kilo costs ₺1,300, a gram ₺1.30. Bought by the case? The quantity is cases × pieces per case: 3 cases of 12 jars make 36, and ₺1,440 ÷ 36 = ₺40 a jar.

How it's worked out

Unit cost

(Total paid + Delivery, packaging etc.) ÷ Quantity

Buying by the case

Quantity = Number of cases × Amount in one case

Price per gram or ml

Price per kg or litre ÷ 1,000

How to use it

  1. Choose whether you bought it in one go or by the case or sack.
  2. Enter the total from the receipt, plus any delivery or packaging you paid for that purchase.
  3. Enter the quantity and its unit; for cases, enter how many cases and how much is in each.
  4. Read the cost of one unit; if you chose kilos or litres, you also get the price per gram or millilitre.
  5. If your recipe uses grams, note the price per gram and compare it at your next purchase.

Watch out

  • Don't mix up units: multiply grams by a price per kilo and the answer is a thousand times too big; 40 g of pistachios is 40 × ₺1.30 = ₺52.00, not 40 × 1,300.
  • Delivery goes in, rent doesn't: shipping for this purchase belongs in unit cost, while rent and bills are fixed costs to track with the break-even calculator.
  • Enter every purchase either with VAT or without; mix the two and you'll spot a price rise or a discount that never happened.
  • One receipt isn't enough: for anything whose price moves often, recalculate at every purchase and carry it into your products with the recipe cost calculator.

Frequently asked questions

How do you work out the price per gram?

Divide the price per kilo by 1,000. Pistachios at ₺1,300 a kilo cost ₺1.30 a gram; a 250 g pack for ₺400 works out at ₺400 ÷ 250 = ₺1.60 a gram, so the small pack is dearer. Litres work the same way: cream at ₺180 a litre is ₺0.18 per ml. If your recipe is written in grams or millilitres, always cost it in those small units.

Is buying in bulk really cheaper?

Compare the unit costs and you'll know. If a 1 kg bag of coffee beans costs ₺1,000 and a 5 kg bag ₺4,500, the big bag works out at ₺900 a kilo, ₺100 a kilo cheaper. But the saving is only real if you use the beans before they go stale; anything you throw away becomes waste and pushes the unit cost back up. And remember the cash sitting on your shelf as stock.

What's the difference between unit cost and average cost?

Unit cost belongs to one purchase: the total on that receipt divided by the quantity. Average cost values the stock you hold when parts of it were bought at different prices. Twenty bottles of olive oil, 8 bought at ₺310 and 12 at ₺360, average ₺340 a bottle. Use the latest purchase's unit cost to set prices, and the average to value what's on your shelves.

How do broken or damaged items change unit cost?

Divide what you paid by the amount you can actually use. If you paid ₺1,440 for 3 cases of 12 glass jars and 4 arrived broken, each of the 32 good jars cost you ₺45, not ₺40. Note the breakage separately; if it keeps happening, it's time to talk to your supplier or build it into your price.
